Ingredients:
  • Pizza Dough
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1/2 tablespoon sugar
  • 1/2 cup warm (not hot) water
  • 2 tablespoons oil
  • 1 tablespoon milk
  • 1/2 tablespoon sugar
  • 1/2 tablespoon honey
  • 1 package Rapid Rise yeast
  • Egg Wash
  • 1 egg and equal amount of water beaten together
  • Toppings/Fillings
  • Mild Italian Sausage
  • Onion
  • Peppers: Poblano (slight warmth), Green Bell (sweet), Anaheim (Medium hot), New Mexico (Medium)
  • Mushrooms
  • Olives
  • Mozzarella Cheese
  • Pepperoni
  • Pineapple chunks
  • etc.
  • Spaghetti sauce
Directions:
Mix flour, salt sugar in a large bowl and warm in microwave to 100 degrees.

Mix remaining dough ingredients and let set for 5-10 minutes.

Combine wet yeast mix with dry ingredients, mix to coarse dough. Turn out onto floured surface and knead until all flour is incorporated. Adjust water/flour balance if needed.

Knead for 5-7 minutes.

Roll into ball, turn into oiled bowl. Cover with damp towel and let rise for one hour in warm (100 degree) area.

While rising, saute onion, sausage, mushrooms. Season sausage and/or onion with salt, pepper, and oregano if desired.

Roast peppers on BBQ, gas stove flame, or in oven. Place in ziplock bag to steam for 10 minutes. Remove the skin and chop.

After 1 hour punch down dough. Make 2 or 3 small balls and let rise for 10 minutes.

Spread or roll to desired size.

Fill with toppings - fold - crimp.

Brush calzone with egg wash.

Sprinkle mozzarella cheese on top.

Sprinkle corn meal on baking sheet then place calzone on top.

Cook at 500 degrees for 7-12 minutes.

Serve with warmed sauce for dipping. Don't put sauce inside or it will get mushy.
